You will need: Beef Broth, Arrowroot Powder, Olive Oil, & Fresh Parsley
-Thaw overnight in the fridge.
-Heat oil in a large skillet over medium-high heat. Add the beef and sear until lightly browned, 2-3 minutes on each side.
-Using a small bowl, whisk together ½ cup of broth and 2 tbsp of arrowroot starch. Pour into the slow cooker along with the 3 1/2 cups of beef broth and the rest of the ingredients from the other freezer bag. Transfer seared beef into the pot, cover then cook on low for 7-8 hours or until meat is cooked through and tender.
-When done cooking, discard the bay leaf and mashed sweet potatoes and veggies from the pot.
TIP: Serve over mashed potatoes with veggies from the pot, and top with parsley.
